Stamppot

ingredients:

Rookworst (50-100g per person)

4 large onions

800g potatoes

800g carrots (alternatively, use curly kale – 3 or 4 leaves per person)

Milk

4 tbsp fat, butter or margarine

Pepper to taste

method:

Clean and chop vegetables. Place potatoes in pan, then carrots (or kale) and onions if desired. Bring to the boil, simmer. Place rookworst on top of vegetables for the last 10 minutes.

Simmer until cooked (20-30 minutes). Place rookworst to one side, drain vegetables, and mash. The mixture may be thinned with a little milk.

When serving, press a well into the mix with the back of a spoon. Fill the well with gravy.
